Happy Halloween

Just popped in to say Happy Halloween to all my lovely readers!

Halloween holds a special place in my heart. I love the candy, costumes, the idea of trick or treating, carving pumpkins, and watching Halloween movies on the sofa. Last weekend we held a little pumpkin carving party at our house with pumpkin beer, spiked hot apple cider, and pumpkin and chocolate doughnuts. Tonight we'll be watching some Hitchcock movies and eating stew. Friday we will be adorning our costumes for some bar time; I'm dressing as Audrey Hepburn and Tim as Indiana Jones (!!!)

Semi-Homemade Oatmeal Recipe

Can we just stop for a minute and talk about oatmeal? I think oatmeal gets a bad rap. People don't like the texture, think it's a old person's breakfast, don't want to take the time to make it. But whatever their beef with oatmeal is, I don't get it. I love it, always have and always will.

The trouble with oatmeal is that the instant is decent, but the good stuff takes time. Time that I would rather spend doing anything else except stirring oatmeal cooking on the stove top. That's where the "semi" in semi-homemade comes in. Get yourself some quick-cooking oats and you have the best of both worlds. The recipe is also super easy, which is a bonus.

Semi-Homemade Oatmeal

Serves 2

Adapted from this recipe

  • 3/4 c milk (I use 2% milk)
  • 1 c water
  • 3/4 c quick-cooking oats
  • 1/2 tsp salt
  • 2 tbsp brown sugar
  • maple syrup and sliced bananas (optional, but highly recommended)

Heat milk and water in a medium pot until heated through and just starting to simmer. Make sure to stir often so it doesn't burn. Add oats and salt, and continue to simmer/just barely boiling for 4-5 minutes. Oatmeal should be thickened, but will continue to thickened when cooling. 

The goal is to not overcook. You still want to get that little bite of the oats that you don't get with mushy instant oatmeal, but without taking the time to make full-on oatmeal.

Once finished, top with a tablespoon of brown sugar, and maybe some maple syrup and sliced bananas. Any kind of fruit will work, but that's my favorite combo. Sliced apples are delicious too!

If you don't like oatmeal, then I don't think there's any hope for you (sorry!). But if you love it, this is a simple way to get the best of both worlds. It makes a great weekend breakfast treat, or maybe even a late night snack.

Anthropologie-Inspired Painted Candle Holders DIY

A few years ago, I found these beautiful glasses on Anthropologie.com (which are sadly no longer available) and I loved the idea of hand-painting glasses. When I found these 69cent glass candle holders at the thrift store, I knew I could turn them into a perfect additions to my tiny fall decorations.  

For this little project, you'll need different colors of craft paint (I used orange, light yellow, and black), your glass candle holders, and a paint brush.

Start by applying the one color of paint in different-sized small dots around the glass candle holders. You'll want to apply them closer together around the bottom of the glass, and more scattered around the top. The overall goal is an ombre effect, but it takes a little bit to really start to see what the end result will look like. Don't give up!

Begin applying the other colors, following the same strategy as before. You want to focus on filling in the open spaces along the bottom of the glass, and be sporatic about it. It doesn't matter if some of them overlap and try to get different sizes, and going different directions.

If you notice the colors blending too much, let dry for a few minutes between colors.

I went around the glass twice with each color, alternating between paint colors. And that's it! Insert a votive or tealight candle and light.

Fall Favorites 2013

Fall is one of my favorite season to dress for. Some days are warm, some chilly. Layers are encouraged. Scarves are back in. And you don't need to worry about where you are going to put your peacoat when you go to a bar on the weekends. You know, the little things in life.

I guess it's pretty obviously that I'm feeling very black, white, tan, and gold this season, but that's pretty much every season recently. I read somewhere that black and white is "in" this season, which doesn't really make any sense to me since it's a classic, neutral color combination, but at least I can say I'm on trend. Black and white just always looks so good together, and it's fun to throw in different colored scarves and accessories. I also received my new iPhone in the mail, and I'm itching for one of these cases... still trying to decide...

Pumpkin Pie Dip Recipe

Let's talk about the easiest pumpkin crowd pleaser there is, pumpkin pie dip. I feel like this recipe has been around the block a few times, but then I take it to a party and people have never heard of it before. It's a super simple recipe that makes a pretty decent amount of fluffy dip and, though I wouldn't say it's healthy, using fat-free CoolWhip keeps the calories down.

Pumpkin Pie Dip

  • 3oz softened cream cheese
  • 1/4c confectionary sugar
  • 3/4c canned pumpkin
  • 1 8oz container of fat-free CoolWhip (it doesn't taste any different, honestly!)
  • 2tsp cinnamon
  • 1tsp nutmeg
  • 1/2tsp ground clove

In a mixer, cream together cream cheese and sugar until combined. Add in spices and pumpkin and mix until just combined. Using a spatula, fold in entire container of CoolWhip.

Cover and let the flavors meld together in the fridge for an hour. Serve chilled with ginger snaps or graham crackers. This dip can easily be made the day before and hang out in the fridge until go time.

This recipe can be found all over the place, but this is my adaptation to it. I tend to like a spicier, more-pumpkin flavor so this recipe reflects that. Adjust spices to your particular liking, but keep in mind that the flavors really do come together in that hour in the fridge.

Enjoy this dip with friends, but save a little for yourself to sneak as dessert.
