Late-Summer Strawberry Lemonade Popsicle Recipe

We are still clinging to summer around here and these Stawberry Lemonade Popsicles are the perfect treat for late summer afternoons. I know fall is right around the corner and soon we will all be thinking about fall layers and pumpkin everything, but these little treats bring me right back to July afternoons at the beach. This is a simple recipe, and only has a few ingriedents. Perfection.

Strawberry Lemonade Popsicles

Yields 6 popsicles

1 1/2c freshly squeezed lemon juice

1/2c cold water

1c sugar

1 pint strawberries, cut into quarters

Add all ingredients to a blender and pulse until smooth. Pour liquid through a fine mesh strainer and push through with a wooden spoon. To make the next step easier, strain liquid into a container with a spout, like a large measuring cup.

Pour liquid into popsicle molds, add sticks, and freeze overnight. Enjoy on a warm weekend afternoon or after a stressful day at work.

These can be made with any kind or combination of berries. Or even with limes for a limeade pop. Or, if you were having a particularly stressful day, sub out the water for limoncello! Possibilities are endless.

Vacation Highlights

I think everyone has their places that feel like a second home. For me, it's the beach. I've spent my whole life traveling to the beach for vacation. Before my parent's purchased their spot, we rented a house for a week with family. Out of everything I remember from my childhood, memories from the beach are probably some of the strongest. 

As an adult, I've loved being able to share my love for the shore with Tim (who pretty much already loved the beach anyway, so it wasn't very hard to get him loving it again). We've even begun unintentionally creating our own little beach traditions that fit what we love to do (and eat!) This past week was a complete relaxation. We slept in a bit, relaxed on the beach, rode bikes, walked the boards, grilled, and had two campfires complete with s'mores. Safe to say we are looking forward to the next weekend we get to spend down there!

August Goals

Listen guys, last month's goals went a little forgotten. Between work, vacations, weekend adventures, sleeping–somehow they just seem to get a way from me. I don't really feel like I completed (or even tried to complete) any of the goals from last month, but that's not going to stop me to move forward! Here what I want to work on this month, and I mean it this time.

  • Get inspired by baking again. In July, I actually developed a few new recipes and blogged about some ones I've been making for a while now. But for August, I want to focus on creating some new sweet treats. I want make things I've never made before and figure out the perfect recipes.
  • Organize our bedroom. We still have a corner with boxes and things that need to be hung in our bedroom. It's a downer, and I want to feel like we live in a put-together space, not just a put-together downstairs.
  • Continue to try and get outside more. With being down the shore right now, getting outside is easy-peasy. There's places to go, beaches and boardwalks to walk on, food to eat outside. But once we settle in from our vacation and I want to focus on getting outside more. More walks around town, more bike riding, more sitting outside with friends, and maybe even a little camping weekend planning. Fresh air does the body good.

I can't believe that we are at the second half of summer already. I'm not ready for it to be over! It's been such a grand summer. 

PS: When I first published this, I called it "July Goals." What's going on with me!? Ha.


July Goals

Last month was a bit of a fumble. Started out strong, got a little rocky towards the middle and is just beginning to work it's self out. We had a couple of wonderful (and well-needed) weekends down the shore, and our move was pretty stress-free. We're going to give another go at getting healthier this month and not talk about it too much. :)

  • Give getting healthier another go. Didn't work too well last month, and that's all I have to say about that.
  • Get outdoors more. I spend a lot of time indoors between work and our standard get home, make dinner, clean a bit routine. I'm excited to get out more. (Zip Lining!)
  • Finish up the last couple of dead spaces in our apartment. It's starting to come along around here, but the last couple of corners with lingering stuff are really starting to get to me.

Moving's No Fun

This was life around here for a few days. Yup, life. Thankfully, it is starting to shape up around here. We are loving our larger apartment, we are loving the couple of new projects we have going on for the space, I'm loving shopping around for chairs and new bedding. We can't wait to get this place spick and span for a little housewarming gathering (with grilled cheese!) and we are making the most of our summer. I'll share a few photos of how things are coming together later this week.

Do you have a moving strategy? Mine is move everything into the new space as fast as possible and make everyone go home. Oh, and try not to stress... :)
